As private islands go, Half Moon Key is the best I've found. The beaches are long and immaculate, there are plenty of beach chairs and umbrellas, and the food isn't bad. I started the day by taking the 8 AM parasailing tour. I anticipated being afraid once aloft, but was too busy enjoying the view. From altitude, I could see the entire island as well as looking down on the ship. Theresa attempted to videotape my flight but ran into the problem of warm wet air meeting a cold dry lens.
The girls had fun just playing at the water's edge. We didn't snorkel as there's not much to see besides fish and sand.
